This is a favourite recipe of ours, we make it often and it is always a hit. The batch we made yesterday was extra special, having been made with tomatoes and cilantro from my garden. So I thought I would take the opportunity to share the recipe.
Black Bean Salsa
1 can black beans
2 tomatoes, chopped
4 green onions, chopped
1 garlic clove, crushed
3 tablespoons cilantro, chopped
juice of 1 lime (or to taste)
1/2 teaspoon cumin
1/2 teaspoon salt
1/2 teaspoon pepper
Drain and rinse black beans. Combine black beans and remaining ingredients in a bowl and refrigerate.
Serve with your favourite tortilla chip. We like it with the Tostitos Hint of Lime chips. It's also quite good just eaten with a fork. :)

I made it to take to Mr & Mrs. Friend's house on Saturday night and the first thing Mr. Friend said when I walked in the door was "Hello JavaChick, where's the Black Bean Salsa?"
And do you want to know how much leftover salsa I brought home? None.

Yummmmm...did it taste as good as it looks? and with fresh tomoatoes and cilantro, must have been terrific.
